Looking forward to Pho: new noodles downtown

Pho Noodle Soup will soon open in the spot last occupied by the organic food store, Green Market – but perhaps best known to those of a certain age as the former location of Taco Villa.

Hee-Young Hong explained that pho is a beef stock-based soup with rice noodles, and will be the restaurant’s primary offering. The pho will be available with different toppings such as sausage, seafood and beef. They will also have several vegetarian dishes, including fried rice and egg rolls.

The main difference to the restaurant space since its last incarnation is that the walls have been painted a bright blue. The modern metallic counter is still there.

When asked when Pho will open, Hong, whose husband Yong-Je Sung is the owner, said “I hope in two weeks.” They are still in the midst of the permitting and approval process, making it difficult to predict a date with certainty.

Hong is excited about the restaurant’s prospects. Ever since their signs went up, she said that people have been peering through the windows and checking the door. Sure enough, as we stood there talking, a woman tried to open the locked door, then peered in to see that they weren’t open yet. She probably found a different lunch option for this afternoon, but soon enough, there will also be Pho.

Yay! I miss the excellent Pho noodles I ate when I lived in California.

Now, if we could just do something about that annoying permitting and approval process taking an indeterminate amount of time...

Grandpa and I ate there recently. We enjoyed it immensely. There is only one menu, so it would be a good choice for dinner. The vegetable rolls looked yummy. I'll get them next time.
